There’s brunch and then there’s BRUNCH, and when we’re talking about the latter, Singapore certainly serves up some showstoppers.

We’re talking about the kind of brunch that might be on a rooftop, in a glitzy hotel restaurant or crafted by a top chef and some of his mates. It’s likely a brunch that you’ll want to dress a little fancier for, but you’ll be rewarded with free-flowing bevvies and even better nosh. 

If all of that sounds up your street, Urban List has rounded up the best spots for brunch in Singapore.

La Brasserie

La Brasserie at The Fullerton Bay Hotel Singapore is set to showcase its refreshed champagne brunch experience, Joie de Vivre, from 1 June.

Expect to be welcomed with a classic cocktail, presented from a beverage trolley. For free-flowing indulgence, the add-on alcohol package (from $218 per person) offers a choice of Ruinart Blanc de Blancs Brut NV or Veuve Clicquot champagne, and the fun continues all afternoon, with shots and digestifs served to the table.

As for the food, two new live stations will be joining the line-up, offering everything you could want from the land and sea. Throughout the meal, you will also get to enjoy pass-around snacks, featuring ‘Chef’s Specials of the Day’ like mini lobster rolls with sea urchin mayonnaise. At the carving station, you can order premium cuts such as New Zealand grass-fed lamb rack, malt roasted Iberico pork belly, and roasted USDA grain-fed prime rib. For a sweet finale, the artisanal French cheese board or Berries Forest dessert is the way to go.

LUCE

Every Sunday, LUCE hosts a lavish international buffet brunch, anchored by authentic Italian fare, ample pours of Bauget-Jouette Champagne, and a live DJ.

Beginning at the raw section, you can indulge in a plethora of seafood on ice, including seasonal live oysters, Boston lobster, snow crab, black mussels, Australian yabby, tiger prawns and sea whelk, before feasting on premium sashimi and sushi. A full spread of LUCE’s Roman-style pizzas will be on offer, with eight selections to choose from including the La Margherita Classica and La Parmigiana. Meanwhile, La Tartufata and La Mortadella highlight ingredients from the Northern Emilia-Romagna region.

From the same region, the Girelle di Pasta al Forno Emiliana, which is a baked pasta dish stuffed with ricotta and mascarpone cheese, green asparagus, and brown butter sauce is a real standout. Other pasta choices include the Gnocchi Sorrentina which showcases pillowy potato dumplings covered in a vibrant Pomodoro sauce and topped with creamy mozzarella, while the Spaghetti di Gragnano alla Bolognese sees perfectly al dente spaghetti coated in a deep, savoury beef sauce.

The Champagne Sunday Brunch is available every Sunday from 12pm to 3pm and is priced at $118++ (includes free-flow soft drinks, juices, coffee and tea), $158++ (includes free-flow Prosecco, Peroni Beer and soft drinks) or $178++ (includes free-flow Champagne or Italian Franciacorta, Aperol Spritz and selected cocktails and wines) per adult.

Every last Sunday of the month, Lantern at The Fullerton Bay Hotel Singapore is serving a new brunch experience, bringing the sunny pleasures of poolside barbecue gatherings to the heart of the city.

The Sunday Barbecue by the Pool experience begins with a trio of refreshing salads, followed by an all-you-can-eat spread of premium seafood and meat-from juicy king prawns to generous cuts of M7 wagyu striploin. For dessert, potong popsicles and fresh fruit skewers served from roving trolleys will offer a cooling respite, as you unwind to Ibiza-style beats spun by a resident DJ and panoramic views of the Marina Bay skyline.

For an extra touch of weekend indulgence, we suggest the free-flowing Moët Hennessy liquor package, which includes Veuve Clicquot champagne, Whispering Angel rosé, and a selection of cocktails.

If brunch atop the Marina Bay Sands isn’t extra, we don’t know what is. LAVO throws a winning Sunday champagne brunch in the sky, but they let you choose how dialled up you want to be on the boujee meter. Whether it’s free-flowing Veuve Clicquot, Moët Rosé or Dom Pérignon, you’re in for an incredible Italian a la carte buffet.

With salumi and formaggi by the gram to get things going, the menu is split into breakfast and lunch, so your taste buds will be happy no matter the time of day they think it is. There’s even a breakfast pizza if you’re craving some doughy goodness. Our pick: the ​​banana pancakes with plantain chips, rosemary-infused maple syrup and Nutella powder. 

Astor Bar

Slinging an adults-only cocktail brunch the first Saturday of the month, this New York-style bar housed within the St. Regis delivers free-flowing champagne and cocktails alongside a five-course epicurean menu.

Following on from the seafood platter, you can choose one item across the starters, eggs and mains before topping the whole extra experience off with something from the dessert trolley. Think crab cakes, bagels, 64-degree eggs, fried chicken, and lobster rolls alongside NYC and Singapore inspired cocktails. Bookings are always a good idea.

It wouldn’t be a list of brunch recs without an honourable dim sum mention. The iconic Red House Seafood puts on a stellar lineup at their a la carte dim sum and seafood buffet.

Featuring all the fried, steamed and baked dim sum faves, along with noodles, house specialties and an optional free-flowing drinks option. $28 extra per head gets you beer, house wines and softies, but bring that total up to $55 and you can have all that plus champagne and G&Ts—we know which we’d choose.

A melting pot of people, art, design, food and retail, Siri House is a dedicated lifestyle space that’s perfect for a boujee brunch with friends. Available across both Saturday and Sunday, Siri House’s weekend brunch menu is a leisurely weekend feast with impressive a la carte brunch plates designed for sharing.

Think dishes like unagi risotto, prawn pappardelle, katsu burgers, Korean fried cauliflower and freshly squeezed juices. Or, if you’re really feeling fancy and you have a party of five, be sure to try the outdoor brunch. Starting at $70 per person, the indulgent menu boasts a lush garden backdrop and starts with a crisp glass of Veuve Clicquot Champagne.

French toast with salted caramel, smoked salmon egg benedict, iberico croque madams and Korean BBQ sandos make up part of the weekend brunch menu at Butcher’s Block.

Part of Raffles hotel, the brunch runs Saturdays and Sundays from 11:30am to 2:30pm and can be paired with a Flow Vinous Experience expertly crafted by the Butcher’s Block sommelier. If you’re down to clown with brunch dessert then you’re definitely going to want to order up some sourdough ice cream.

Manhattan

Boasting a rickhouse filled with dark rum and maple-finished bourbons alongside a garnish bar, Manhattan’s adults-only Sunday cocktail brunch is a must-do in Singapore. Themed around tastes of the Big Apple there’s everything from hand-rolled bagels with house-made schmears and crepes suzette to Maine lobsters and freshly shucked American oysters on the menu.

And if you can tear yourself away from the unlimited bloody Mary’s, G&Ts, craft cocktails, beer and wine, you’re going to want to make a dash for the milkshake station. Heck, just do it all, you were always going to roll home anyway.

Alley On 25 at the Andaz hotel hosts a lazy breakfast (AKA brunch) on weekends and public holidays. Graze on a spread of seafood, cold cuts, cereal, waffles, profiteroles and jars of chia pudding alongside an extra a la carte meal of your choosing.

You’ll be hard pressed to choose just one with everything from pulled pork bagels and eggs benny to croque madams and lobster mac n cheese on the cards. Add $45 for free-flowing prosecco, beer and wine and you’ve got yourself a midday party.

Madame Fan

Late risers will be overjoyed with Madame Fan’s cocktail dim sum brunch. Offering two seatings every Saturday and Sunday, you can expect an inventive take on traditional Chinese yum cha.

Split into two categories, dim sum and classic Cantonese (an a la carte menu), the experience can be taken up a notch with Madame Fan’s Sip or Guzzle add ons. Both boozy options include cocktails like the Rooibos Americano with Campari, sweet vermouth, rooibos tea and soda, and the Portofino with gin, Campari, fermented strawberry and cherry tomato, salted caramel and lemon. Definitely grab a few salted egg yolk custard buns for dessert.
